A semi hard cheese made in a Tomme style, with recipe notes by the Transhumance crowd.  

100% our own Raw milk, no freeze dried-cultures, natural starter. 

Whole cheeses are roughly 2kg, a half is 1kg. Lumps are 200g upwards...
